1 1/3 cup (400 g) Artisan White Chocolate Baking Drops
½ cup (125 g) unsalted butter
¼ cup (70 g) corn syrup
2 tablespoons of cold cream 35%
1 ½ teaspoon peppermint extract
150 g small marshmallows
½ cup (85 g) of holidays coloured chocolate confections
6 Holidays crumbled pretzels + 4 to decorate
Grease a 8 x 8 square baking pan and add parchment paper, letting the paper extend over two opposite sides. This will help remove the cake from the baking pan.
Place the white chocolate, butter and corn syrup in a pot over medium-low heat. Take the pan off the heat and add the cold cream 35%. Stir consistently until completely melted.
Add the peppermint extract, then the holidays coloured chocolate confections and crumbled pretzels. Mix until combined.
Pour the mixture in the baking pan. Add 4 pretzels and some extra candies to decorate the bark.
Place it in the fridge for at least 2 hours or until set.
Slice the rocky road into bite-sized squares.
